I grew up eating the Madeleines , and every bite of a freshly-baked Madeleine sends me back home. A perfect Madeleine is the scalloped edges and evenly brown colour of the crust. This is why I don’t like using silicone molds to make them! This one is made of heavy duty tinned steel.

Recipe for home made Madeleines
*Ingredients for 12 pieces
100 g butter
100 g flour
100 g sugar
4 g baking powder
1/4 lime juice (or lemon juice)
Preheat the oven to 200 °C.
Melt the butter.
Mix flour with sugar and baking powder.
Stir the eggs and add the butter.
Add the lime juice.
Fill the Madeleine pan with the dough and bake for 8 to 10 minutes.
